As the holiday season comes to an end and the New Year draws closer and closer, its time to kick it into gear with our overall wellness and decide to make the best choices for our bodies in 2017. But why wait a week?? Today I got home and had a strong craving for none other than banana bread. While banana bread is one of my favorite easy, clean, delicious recipes to make from scratch, theres many times when I don’t have all the time and need a little help from my friend Simple Mills. Simple Mills not only has various bread and muffin mixes, but loads of other delicious, wholesome mixes to make your day a little easier while still getting the yummy food you want. Another added bonus is that all of Simple Mills products are naturally gluten free without sacrificing the flavor/texture (they use almond or coconut flour) so, if you’re sensitive to gluten or dairy as many people are, these mixes are just for you! Today I kept it as simple as simple gets but, I love putting different spins on these mixes by adding nuts, dried fruit, banana slices, chocolate chips, etc.
This mix can be made into a loaf or muffins and is the perfect breakfast, snack, afternoon pick me up or even dessert!
I follow the recipe given on the back of the box, but I always make an effort to use quality, organic ingredients to make this delicious bread as nourishing as possible. My go-to for eggs is always Vital Farms Pasture Raised Eggs. I also always prefer to use coconut oil in place of vegetable or canola and Avocado Oil Spray in place of other non-stick sprays.
