As Holiday break is slowly but surely coming to an end, I’m doing my best to make the most out of my last days of freedom! This morning started off my absolute favorite way.. a sweaty, challenging sculpt yoga class by yours truly, Corepower Yoga. Keep an eye out for a full post on Corepower and how it has changed my relationship with myself and yoga as a whole (coming soon:)) But back to todays lovely lunch. I’m very lucky to live in a place (Austin, TX) where the health and wellness world is booming. There’s a yoga studio, whole/nutritious restaurants or a running trail on every corner, making this my idea of heaven on earth. One of my favorite things to do of course is eat real food that I feel good about putting in my body, knowing every bite is nourishing me inside and out. I have a running list of new places to hit in the coming weeks and Picnik was at the top! The vibe is laid back, fun and lively. Its bright, accessible and the perfect place to grab a quick bite anytime of day. This restaurant is just about as good as it gets for a foodie like me. With an extensive menu full of clean, flavorful choices along with a large coffee list (to DIE for), it was difficult, to say the least, to choose just one thing!
To start my meal, I knew I wanted a warm, cozy chai latte. As I browsed the menu, I soon caught on that this was not your typical sugar filled cup of joe… Oh no. Two words. Butter. Coffee. I’ve been hearing about this wellness trend for a while now, but hadn’t fully hopped on the bandwagon, as the idea of butter in my delicious, sweet morning cup didn’t really sound… appetizing. But, after today, I can confidently say Bulletproof Coffee is 100% worth the hype. Smooth, creamy, flavorful and chock-full of incredible nutrients. The list could go on but to sum it up, if you haven’t tried it yet, what are you waiting for?
It was 1 pm and I had yet to have my daily avocado fix… SO, you know what that means.. GUAC. This guacamole is not your typical guac. It’s full of fresh apple and kale, served with tortilla chips and vegetable crudités, making it the perfect light starter to your meal.
After snacking and sipping on our starters and lots of deliberation of what to choose, I decided on the Harvest Hash. Breakfast is my #1. If you know me, you know I could easily eat breakfast every meal of the day, so this was an easy choice for my lunch. Filled with the most incredible combination of warm, nutritious ingredients (roasted sweet potato, spinach, brussels sprouts, grass-fed beef breakfast sausage, sage, apple, toasted pecans, maple vinaigrette, and a poached egg to be exact) this is something I will for sure be ordering on repeat.
My sister, always a trooper putting up with me constantly dragging her to “granola” restaurants as she refers to them;), decided to order the fish tacos. Neither of us really knew what to expect, but these were the lightest, most fresh- tasting fish tacos I’ve had in a while. Picnik serves no corn products, so these were wrapped in a fluffy flour tortilla, topped with a sweet orange-sesame slaw, cilantro, lime, and the most decadent chipotle aioli.
To sum it up, Picnik blew my expectations out of the water. I truly love seeing local restaurants using pure, clean ingredients that are 100% locally sourced. Picnik ‘s dedication to offering equally flavorful and nourishing eats is something I LOVE. If you live in or are are ever visiting the Austin area, be sure to have Picnik high on your list!
