This chilly winter morning I woke up and knew it was time for a warm, cozy bowl of oats. Nothing hits the spot like this delicious breakfast classic. What I really love about oatmeal is how you can customize it to just how you’re feeling. Salty, sweet, savory… you can really go any direction with it. Warm apples with cinnamon, nutmeg and almond butter. Tell me something that’s more perfect for this season.. exactly. nothing! This combination is simple to throw together and packed with flavor and nutrients. Cinnamon, in my opinion, one of the most underrated spices in the spice cabinet. It’s loaded with antioxidants, has anti-inflammatory properties, may cut the risk of heart disease, and lowers blood sugar levels just to name a few. Good stuff, not to mention it can completely transform the warmth and flavor of any dish.

So, let’s get started with these oats. One of my new favorite things to do to elevate my oats is add equal parts grated zucchini. I know, it may sound crazy, but I can promise you there’s no distinct flavor in zucchini, therefore it just adds to the volume, creating a larger, more dense bowl. Next, I add my Califia Farms Almond Milk, the most decadent, pure almond milk out there in my opinion, cinnamon and a sprinkle of coconut sugar (stevia is also an option as a sweetener, just depends on your taste preference). To top it off, I threw together simple sautéed apples in a spice blend of cinnamon and nutmeg and the final touch? the almond butter drizzle of course:) I hope you enjoy this recipe as much as I did!

Cozy Cinnamon Apple Oatmeal
This is the perfect, cozy winter breakfast!

Ingredients

  • Oatmeal base
  • 1/2 cup of oats
  • 1/2 cup of grated zucchini (pat dry or use cheese cloth to drain)
  • 1 cup of almond milk
  • 1 tsp of coconut sugar or 4 drops of stevia (taste preference)
  • 1/2 tsp cinnamon
  • Apple topping
  • 1/2 chopped honeycrisp apple
  • 1/2 tsp of cinnamon
  • 1/4 tsp of nutmeg
  • drizzle with preferred nut butter

Directions

  1. Combine oats, grated zucchini, almond milk and cinnamon.
  2. Heat oat mixture according to packaging (stove top or microwave).
  3. Begin to sauté the chopped apples, cinnamon and nutmeg in Ghee (linked is my favorite ghee brand!)
  4. Once oats are cooked to desired consistency and apples are soft, top oats with apple toping and almond butter drizzle.
  5. Enjoy!!
