Hi Guys!

So. Day 2 of 2017.. How’s it going so far?? I hope your New Year was filled with lots of fun and really good food:) To start the first Monday of this new year on the right foot, I decided to whip up one of my favorite simple and delicious snacks–one that I’m convinced I will never get tired of. There’s something so classic about chips and dip. It’s quick and usually an all around crowd pleaser! Although delicious, those salty, crunchy pieces of goodness are usually filled with some not so good ingredients..(aka the ones you can’t pronounce!) So, I had to find a better way.. and I did!

Sweet potatoes are one of my favorite foods of all time. Easily. They’re incredibly simple and delicious and equally packed with nutrients. The zucchini doesn’t have a strong taste, so when seasoned and baked right, they’re crispy perfection! The combination of these two is exactly what I needed to curb that salty craving without making an unhealthy choice. Now, these chips are great on their own- but you know what makes anything better? DIP! Dip is one of the most versatile dishes in the kitchen. The options are endless, but today, I decided on an elevated avocado hummus. Hummus is something you can easily transform with a few spices and herbs and I did just that! The mix of the cilantro, avocado and lime offers a fresh twist on the classic. I then spiced it up with some fresh garlic, cumin, paprika and voila! The most incredibly delicious hummus EVER. This chip/dip combo is perfect to make ahead or eat right away, but I can promise it won’t disappoint! Quick health lesson: Chickpeas are high in protein and fiber. Avocado is an amazing healthy fat source and garlic has active compounds that can help control blood pressure. Sweet potatoes are high in vitamin B6, C, and D and have been proven to help support your immune system. A bunch of good stuff packed into one yummy combination! bowl-pic

To make the chips thin and crispy, I use a mandolin, one of my new fave kitchen tools!

Veggie Chips with Avocado Lime Hummus
The perfect healthy twist on a classic snack!



  • 1 Sweet potato
  • 1 Zucchini
  • Avocado Oil
  • Himalayan sea salt & pepper (To taste)


  • 2 cups drained chickpeas
  • 1/2 cup tahini
  • 1/4 cup of olive oil
  • 2 cloves of garlic
  • salt and pepper to taste
  • 1/2 avocado
  • Handful of chopped cilantro
  • Juice of 1 lemon and 1 lime
  • 1 tbsp of cumin
  • 1 tbsp of paprika


  1. Preheat oven to 250°
  2. Slice sweet potato and zucchini into thin slices. (the thinner the slice, the crispier the chip!)
  3. Spray with avocado oil– This is my favorite!
  4. Season with salt & pepper
  5. Spread on baking sheet and cook for 30-45 min, depending on the thickness of chips
  6. Combine all ingredients of hummus into food processor and blend till smooth and creamy. Add spices as desired.
  7. Plate and Enjoy!
