Hi Guys!

I hope you’re all having a wonderful Wednesday…half way through!! The past few days here in Austin, the weather has been dreamy. Sunny & 75, just how I like it.. Until this morning when I woke up and was thrown back into the reality of winters blistering cold temperatures.. I’m not having it. So, I thought to lighten the mood, I would whip up a new banana bread recipe, but I wanted to switch it up little. Banana bread is good for the soul and was the perfect pick me up for this wintery day.  I instantly thought of cinnamon and apples and gave it a try. To say the least, it blew my expectations out of the water. De. Lish. I found the perfect mini muffin pan and decided on Apple Banana Mini Muffins. I threw the combination together and the rest is history.. aka 15 minutes later the most glorious bites of warm, soft bread graced their way out of the oven and into my belly. These make the perfect breakfast, quick mid-day snack or dessert! You can customize the add-ins just how you like, so feel free to get creative!

Apple Banana Mini Muffins

Total time: 30 minutes

Try these simple and clean mini muffins out for the perfect breakfast or grab-and-go snack packed with warm flavor.

Ingredients

  • 1/2 cup of Oat flour
  • 1/4 cup of Almond flour
  • 1 Egg
  • 2 1/2 Ripened bananas
  • 2 tbsp Honey
  • 1 tsp Vanilla
  • 1/2 tsp Baking soda
  • 1/2 tsp Cinnamon
  • 1/2 Chopped apple

Directions

  1. Pre-heat oven to 375º.
  2. Combine egg, honey, vanilla and mashed banana.
  3. Combine flour, baking soda and cinnamon.
  4. Incorporate dry ingredients with wet; fold in chopped apples.
  5. Divide into greased mini muffin pans.
  6. Bake for 13-15 minutes (until golden on top).
  7. Enjoy!
